Transformed 1930s warehouse, located one block from Warren Street, will welcome locals and visitors.
Hudson, New York (June 28, 2023)—The Union Street Brewing Company announced that it would open a brewery, taproom, and modern beer garden in historic downtown Hudson, NY, on Saturday, July 15, 2023. Centrally located one block from Warren and 7th Streets, the brewery will be in the heart of Hudson, just minutes away from bustling hotels, restaurants, and shops. The site includes a state-of-the-art, brewing facility, taproom, separate event space, and a large modern-day beer garden. The 6,000-square-foot space is a converted 1930s warehouse, complete with soaring ceilings, exposed trusses and columns, that had fallen into disrepair and has been transformed into a stunning 2,000-square-foot tap room and adjoining 2,500-square-foot brewery space. The new brewery will also have a 1,000-square-foot dedicated event space on the lower level. A large adjacent vacant lot has been developed as a modern beer garden that will welcome patrons in the spring, summer, and fall.
Owners Emma and Paul O’Donnell look forward to sharing their obsession for craft beer with the greater Hudson Valley. “We have a passion for craft beer and the Hudson Valley, and have been developing beers using local ingredients for many years.” said Paul O’Donnell. “When we found the site on Union Street, everything fell into place, and we knew we also had the perfect name for the brewery,” said Emma O’Donnell. “Our name reinforces our commitment to being a place of connection and community, and we can’t wait to welcome locals and visitorsalike.” Paul will continue to develop beer recipes and work closely with new brewmaster Keir Hamilton, while Emma will focus on taproom operations.
The Beer
While the focus is on hop-forward, juicy brews, there will be a constantly rotating selection of core and seasonal beers. There is something for every beer enthusiast, and canned beer will be available to enjoy at home. New York State wines and spirits will be available as well. The O’Donnells’ commitment to local ingredients supports local Hudson Valley farmers and businesses and reduces the brewery’s carbon footprint.
Complimenting the beverages will be a selection of food produced in the brewery’s kitchen by chef Joel Somerstein.
The Space
Kristina Dousharm Architecture [KDA], based in Red Hook, NY, and Mercer Construction, located in Clifton Park, NY, worked with the O’Donnells to bring their dream to fruition. KDA is known for its innovative and respectful restorations of older structures. Their other projects include Hutton Brickyards in Kingston, NY, the Howard Hotel in Hudson, and various other commercial and residential projects throughout the Hudson Valley. “Spaces in Hudson tend to be more domestic in size, but this is a much larger scale,” said Kristina Dousharm. “It was very important to Emma and Paul to maintain the character of the building. We made beams and trusses a central feature by placing insulation on the roof exterior.” The unusually large outdoor space is accessible via a new external staircase from the brewery’s parking area on Union Street.
Mercer Construction is a highly regarded construction company with deep expertise in commercial building projects and renovations in New York State. Reclaimed wood from the warehouse is used throughout the tap room to construct the bar, banquets, and tables.

About the Team
Emma and Paul O’Donnell have lived in the Hudson Valley for over 15 years. They have combined their passion for craft beer with their professional backgrounds in design, HR, and technology to create a craft beer destination in Hudson, NY.
Keir Hamilton is the Head Brewer at Union Street Brewing. He brings over ten years of fermentation experience working in the brewing industry, most recently at Alewife Brewing in Queens, NY, and Sixpoint in Brooklyn, NY, plus a history in distilled spirits. A native of Scotland, Keir is excited to be brewing in the beautiful Hudson Valley.
Joel Somerstein is the Head Chef at Union Street Brewing. After graduating from the Culinary Institute of America in Hyde Park, NY, Joel began his career working in France and New York City training initially at Restaurant Lafayette under Chef Jean-Georges Vongerichten. Raised in Woodstock, NY, he is enthusiastic about his return to the Hudson Valley.
